almond biscuits

Here is my recipe for almond biscuits that do not just taste delicious at Christmas. They are baked on biscuit soil because there were no wafers at that time.

ingredients

For the dough:

  • 125 g of butter or margarine
  • 70 g of sugar
  • 3 egg yolks
  • 250 g flour

Process these ingredients to a smooth dough and let it rest.

For covering:

  • 185 g almonds or nuts
  • 185 g of sugar
  • 1 vanilla sugar
  • 3 egg whites
  • also a hearty red jam for the filling

preparation

  1. Roll out the dough for the biscuit bottom and cut out small round cookies. You can take a shot glass for that.
  2. Place these cookies at intervals on a baking sheet lined with baking paper.
  3. For the topping, whip up the egg whites, carefully fold in the almonds and the sugar and vanilla sugar and spread the mixture on the biscuits with two teaspoons.
  4. Make a hole in the middle with a wooden spoon and fill a knife with jam. Do not take too much jam, otherwise it will run out.
  5. Bake at about 200 ° for about 8 to 10 minutes.
  6. You can also omit the jam and decorate the cookies after baking with melted chocolate.
  7. Instead of almonds you can also take ground nuts, then it's just nut cookies.

Now for those who want to bake the cookies, good luck and good appetite!
