I searched and found some time for a good and simple bread recipe. I would like to introduce you today. You do not need a bread maker it works very well in the oven.

If you do not like walnuts, you can skip them and use 3 tablespoons of sunflower seeds, 3 tablespoons of flaxseed and 3 tablespoons of flaxseed instead. But I also did it completely without nuts and the bread was also very good.


I also make the bread spice for this bread myself. For this purpose, I commute by hand in a mortar or in the coffee grinder different spices together to make the bread wholesome.

ingredients

  • 400 g spelled and 100 g buckwheat finely ground
  • 2 teaspoons salt
  • 500 ml of lukewarm water with 2 tablespoons of apple cider vinegar
  • 25 g of fresh germ / yeast
  • 2 teaspoons of bread spices
  • about 200 g walnuts whole halves

I made the bread spice from these ingredients

  • 2 teaspoons of fennel seeds
  • 2 tsp anise seeds
  • 2 teaspoons cumin (cumin) or normal caraway
  • 1 tsp Korean seed
  • 2 teas of linseed
  • 1 teaspoon of cardamom seeds

preparation

  1. First, you spread a bread baking mold with oil and dusted with flour, so that the bread can be easily removed later.
  2. Now you can already pre-heat the oven at top and bottom heat at 220 degrees.
  3. Then weigh the ingredients and finely grind the corn and buckwheat. If you do not have a flour mill you are already using ground flour.
  4. In 500ml of water dissolve 2 tablespoons of apple cider vinegar and 25g of yeast. The flour is mixed with salt, spices and walnuts. All ingredients are quickly mixed with the hand mixer with dough hook.
  5. Paint the dough with the prepared baking tin, it is important to paint a bowl in the middle.
  6. The bread does not have to go and can be baked immediately. Now bake on medium bar at 220 degrees for about 60 minutes until golden brown.
  7. When the mold has cooled, topple out the bread.

The bread is very juicy and holds in the bread basket about 4 days. This bread dough can also be used to bake small bread rolls. The baking ability is but a lot better I think if you grind the grain fresh before baking.


Personally, this bread has never broken. It dries only from the 3rd day more. Then I like to make crunchy bread croutons as a soup for pumpkin cream soup.
