A recipe for wrap dumplings from the pressure cooker.

ingredients

  • cooked pressed potatoes (from 500 g of raw potatoes)
  • 1 egg
  • 70 g potato starch
  • 70 g of flour
  • Salt and nutmeg
  • a little liquid butter
  • Breadcrumbs and parsley

preparation

  1. Remove the potatoes from the day before from the refrigerator, add the egg, potato starch, flour, salt and nutmeg, knead well.
  2. Roll out the potato dough 1 cm thick and spread the liquid butter on top, then sprinkle with breadcrumbs and some chopped parsley.
  3. Roll it up and make it suitable for steaming.
  4. Heat 250 ml of water in the pressure cooker and place the roll dumplings in the perforated insert.
  5. Close the pot, set to level 1 on the lid.
  6. Now set the stove to full speed - this is the 9th for me.
  7. After the green ring is visible, reduce the heat input to the minimum.
  8. After eight minutes on the pot handle slightly let off steam. That went well, since the lid was set only on the 1.
  9. After two minutes remove the dumplings and cut.

Works well if potatoes are left over from the day before. Of course you can also cook the potatoes on the day of preparation. You then have to wait a while to cool down.
