Baked apples with almond and raisin filling
Ingredients for 4 servings:
4 large apples, e.g. russet
30 g Amarettini (Italian almond macaroons)
4 tablespoons red currant jelly
30 g raisins
30 g almond sticks
1 tbsp rum
2 tsp margarine
In addition: fat for the form
Preparation:
Wash apples hot, dry and cut out the core with the help of an apple peeler.
Roast almond sticks in a hot pan until golden yellow without adding any fat and immediately place on a plate to cool down. Crumble the amarettini, mix with redcurrant jelly, raisins, almonds and rum. Put the filling with a teaspoon into the opening of the apples and press in with a stirring spoon.
Place the baked apples in a greased baking dish and cover with margarine flakes. Bake in preheated oven at 200 ° C for approx. 25 minutes.
Hot custard or ice-cold vanilla ice cream or better, everything tastes together.
Tip: If children or pregnant women are eating, replace the rum with 1 tablespoon of orange juice.
Note: If you want to make the dishwashing easier, you can put some baking paper in the baking dish before the apples come in.
