Black Forest cake WITHOUT alcohol

You need for the Black Forest cake WITHOUT alcohol ...

For the ground:

  • 150 g of couverture
  • 75 g of butter
  • 6 eggs
  • 180 g of sugar
  • 100 g of flour
  • 50 g cornstarch
  • 2 teaspoons baking powder (heaped)

For covering":


  • 700 g of white morels (drained weight)
  • leave a few (13 pieces) of cherries for the decoration!
  • 500 ml cherry juice (from the glass of the morello cherries)
  • 4 tablespoons cornstarch
  • 2 tbsp sugar
  • 1 l of whipped cream (best no H-whipped cream, which is not so nice)
  • Cream stabilizer (who likes)
  • 2 pck vanilla sugar
  • grated chocolate

Prepare the soil:

  1. Melt 150 g of couverture with 75 g of butter in a water bath
  2. Separate 6 eggs
  3. Beat 6 egg whites until stiff
  4. Beat 6 egg yolks with 180 g sugar until foamy
  5. Mix the couverture under the yolk-sugar mass
  6. 100 g flour 50 g cornstarch 2 teaspoon baking powder over the egg whites 7 and place loosely

Lay out the springform 26 cm with baking paper. Add the dough and bake in a preheated oven at 175 degrees for about 40-45 minutes ...

Prepare topping:

  1. Drain cherries (keep juice)
  2. Mix 4 tablespoons cornstarch, 2 tablespoons sugar with a little juice
  3. Bring 500 ml of cherry juice to the boil
  4. Add cornflour, bring to a boil
  5. Add cherries and let cool
  6. Beat 1 L cream with 2 tbsp vanilla sugar (cream stabilizer) until stiff

Then it starts...


Put the first soil on the desired plate, spread with cherries, then cream ...

Then wrap the last bottom and the whole cake around with the remaining cream.

Leave some cream for the rosettes.

Sprinkle the cherries with raspberry chocolate and you're done!
