Bread without kneading

Recently I baked a "bread without kneading" (got the recipe from a friend). Does not do much work - but takes time.

  • 400 g of flour - have already baked it with different types of flour (depending on the variety may need a little more water)
  • 1 1/4 teaspoon salt
  • 1/4 tsp. (1g) yeast dry or fresh
  • 3 dl of water - important: cool water

Put all the ingredients in a bowl and mix only until the dough holds together - NOT KNEE!

Cover and allow to stand for 12-18 hours until the dough has doubled. Put the dough on a floured surface and fold 4 times. i.e. from all sides into the middle. Shape the part quickly and place on a floured cloth and sprinkle with flour. Let stand for another 1-2 hours.

Now the trick for baking! Put a cast iron pan (roasting pan) with lid in the oven and preheat to 240 degrees. Remove the pan from the oven, remove the lid and place the bread in the pan with the help of the cloth. Quickly cover with the hot lid and put in the oven. Bake for 30 minutes, remove the lid and bake the bread again for 15 - 30 minutes. Remove the bread from the pot and let cool on a grid.

The bread has a wonderful delicious crust!

I have already baked the bread with different types of flour and also with flakes or grains and of course you can also bake "usually" produced bread in a roasting pan - which also becomes very crispy. - In www (keyword for the search: bread without kneading) there are many recipes.
