Cake Pops - the trend from the USA

Cake pops are the trend from the States. There are about 2 cm large balls of cake dough with a delicious frosting dipped in delicious chocolate. I've picked out a nice recipe that fits perfectly with the upcoming summer.

Here's my recipe for lemon cake pops!

ingredients

For the dough you need:


  • 250 g butter
  • 250 g flour
  • 200 g of sugar
  • 1 teaspoon Baking powder
  • 1 pinch of salt
  • 4 eggs
  1. Beat butter and sugar with the mixer until creamy. Beat in the eggs one at a time and continue to stir. Now the dry ingredients in the egg-butter-sugar-mass seven and stir well again!
  2. Grease a box mold well, pour in the dough and bake for 45 - 50 minutes (I take convection, at 180 ° C). Do not forget the stick sample. The cake should not be "slippery" inside! After baking, allow the cake to cool briefly and place it on a wire rack. He should now settle down a little and cool down ...

For frosting you need:

  • 150 g of powdered sugar
  • 125 g cream cheese
  • 75 g of butter
  • 3 teaspoons lemon juice
  • Abrasion of an untreated lemon

preparation

  1. Beat the soft butter and the cream cheese until creamy. Add remaining ingredients and stir.
  2. To make the cake pops, cut off the dark and crispy corners of the cake. The remaining cake is cut with a large knife into irregularly sized pieces, which are then crumbled.
  3. Cover a baking sheet (or large plates, depending on how big your fridge is) with baking paper and mix the cake crumbs with the frosting. From this sticky mass you are now forming your cake pops. How big you want them is your business. I personally find 2 - 3 cm ideal.
  4. Put the balls in the refrigerator for one hour. (For urgent: 30 minutes in the freezer)

For the decoration:

  • 450 g white couverture
  • Crumble, lemon halves, ...

Melt the couverture in a water bath. Lollipop stick (you can also do it with french fries or shashlik skewers, you do not have to take the expensive sticks!), Dive into the chocolate about the width of a finger and impale the balls.


(Tip: if the chocolate coating is not liquid enough, just add a teaspoon of coconut oil to the couverture and let it melt, which makes it smooth again)

Now pull the cake pops completely through the chocolate, drain and decorate. The decorating is best done on a Styrofoam plate. The Cake Pops have a nice hold and they are easier to decorate. Then put in the fridge again for about 1 hour.

The cake pops are refrigerated well a week durable.

Especially for kids, such cake pops are a really funny thing.
