Chicken on rice

Is an old recipe of my mother in law. Takes a bit long, but it is delicious. For the time, but there can still be conjured up a main meal.

You take

1 soup chicken, preferably a big one
Greens, onions, a few peppercorns and a few juniper berries, salt, pepper.


First of all, cook the chicken with the greens and the onions, greens and onions should of course be chopped, roughly divide is enough.

Put a pot with plenty of water, it should come out a lot of chicken broth. Simmer for two hours. Then remove the chicken, remove the vegetables with a ladle and set aside.

Peel off the skin of the chicken and then cut, preferably by hand, shred chicken meat into small pieces.


Now we come to the second step. We now have the chicken broth, the vegetables and the chicken meat and the skin.

What we need now is this:

Rice, mushrooms (canned, first choice, who would like to have fresh - canned in the case is almost better, because they are not that dry), curry and Emmentaler cheese.


While the chicken is simmering, you can already cook the rice and cut the mushrooms. Grate the cheese for gratin.

Prepare a baking dish, a high one, by brushing it with butter.

When everything is ready, you can now see: rice, mushrooms, cheese, meat, chicken broth, skin and vegetables.

Here we go:

In the casserole dish first cover the ground with rice, curry on it, then the chicken meat, then the mushrooms and again a layer of rice, curry again, again chicken meat, mushrooms again, rice again, season again and so on until the casserole dish full is.

Now important, we do not want it to be too dry, pour in some of the chicken broth and sprinkle it all over with the cheese and then let it bake in the oven for about half an hour with the lid on - the rice chicken is ready.

Serve with a crisp, preferably green salad.

But what do I do now with the rest of the chicken stock, the skin and the cooked soup vegetables? Make a delicious chicken soup out of it.

The basis is your chicken broth, bring it to a boil and then a couple of tagliatelle in, maybe you have left some of the meat - in it, the vegetables, in it. And the skin? Season and fry, and when the soup is ready, add it to it.

Enjoy cooking - and sounds a lot more complicated than it really is. Is super delicious and super cheap, makes you full.
