"Coarse" fish cakes from cheap salmon

The cheapest fresh fish is my knowledge of Alaska or Pacific salmon unpaniert from the freezer, and I do not mean these cut to size plates in the box, but the real fillets in the bag. These are not the noblest parts, but "end pieces". However, they are perfect for this recipe:

The thawed or thawed (microwaved) fillets with a little oil and salt and roast in the pan. With the spatula still in the pan "cut up" until medium fine and fry the pieces until they are lightly browned. Put the whole in a bowl, beat one egg (or two, depending on the amount) and stir well. Do not add breadcrumbs!

Then proceed as with fritters (Reiberdatschi, potato pancakes, Riewkooche or whatever you call them), so each one or two heaped tablespoons fry on both sides in plenty of oil nice brown. Put on a plate with kitchen paper. It is best to lukewarm or cold, but it is a matter of taste. In addition, remoulade, and with lettuce leaf and rolls you can also tinker a delicious Fischburger.
