Fish cooked too long? Here is a tip to save the meal
If the fish has been cooked for too long and then decays, you can still conjure up wonderful dishes from it.
Here is a recipe:
fish dumplings
Ingredients:
400g fish leftovers
40g margarine (Mr. Lichter would of course take butter!)
30g of flour
1 onion
2 eggs (1 is completely used, the 2nd separate)
Flour and bread crumbs for breading
Salt, pepper, a little water
Preparation:
Free the fish remains of skin and bones and mince. Make a "brandy" from the margarine and flour, roast the chopped onion in it and deglaze with a little water.
Then boil for 10 minutes, season with salt & pepper, an egg yolk underneath and then mix with the minced fish. Allow this mass to cool.
Then make small dumplings, then roll in flour, whisked egg and bread crumbs (in that order!). Bake in hot fat until golden brown and serve with mixed vegetables and boiled potatoes.
Wonderfully fits in place of the vegetables also a delicious prepared lettuce or cucumber salad.
