Delicious couscous salad with arugula

A very tasty couscous salad - the right thing for all couscous fans.

ingredients

  • 300 g of couscous
  • 650 ml of boiling salted water mixed with half a bouillon cube
  • 3 tomatoes or some cocktail tomatoes
  • 1 onion in fine cubes
  • 1/2 can of corn
  • 1 big zucchini (in cubes)
  • 1 garlic clove (finely chopped)
  • Rucula at will
  • a little vinegar, oil, salt, pepper, paprika, curry, turmeric

preparation

  1. Boil the salted water with the bouillon cube.
  2. Weigh the couscous and place in a pot, then pour all the salt water over it, stir and let it absorb until no water is left. Stir from time to time, but never cook!
  3. In the meantime, cut all ingredients small.
  4. Fry the cubed zucchini in a pan with a little oil, then add the onion and garlic. Let cool down.
  5. Then mix everything with the now cooled couscous, season with the spices and add the arugula.
