Oatmeal and flax seed bread rolls (without flour, without yeast)

In the food magazine from the supermarket, this month I found and tried the recipe for a bread made from oatmeal with lots of nuts and seeds. It tasted very good, but unfortunately was so crumbly, that I have modified it and prefer to bake smaller rolls.

ingredients

  • 250 g of swelling ingredients (2 - 3 varieties), z. B.
    • 125 g of oatmeal
    • 90 g of flaxseed
    • 35 g of chia seeds

Alternatively: fine semolina from wheat (couscous) or corn (polenta), psyllium


  • 250 g whole, chopped or grated nuts, almonds, seeds, (2 - 3 varieties) z. B.
    • 100 g of grated almonds
    • 75 g of sesame seeds
    • 75 g of chopped walnuts

Alternatively: sunflower seeds, pumpkin seeds, hazelnuts, cashews, peanuts

  • 1.5 tbsp of brown sugar or other sweetener (honey, thick juice ...)
  • 1 tsp salt
  • 3 tbsp olive oil
  • 400 ml of boiling water
  • if necessary, an egg

preparation

  1. Put dry ingredients in a bowl and mix well with the wooden spoon.
  2. Add the olive oil to the dry ingredients and when using (moist) sweeteners such as honey or thick juice, this too.
  3. Bring 400 ml of water to a boil and pour over the dry ingredients.
  4. Mix well and cover well for 2 hours.
  5. Lay out a baking tray with baking paper and preheat the oven to 180 degrees.
  6. Check if the dough forms. If you have used too little swelling ingredients, you can now stir in an egg (in the example ingredients that was not necessary).
  7. With 2 tablespoons, ice cream cone or Makronator from the dough form small, firm rolls (about 4 cm diameter) and put on the baking sheet. The bread rolls may sit quietly next to each other, because they do not open. I shaped my rolls with the Makronator.
  8. Bake at 180 degrees for about 1 hour. I checked every 20 minutes and turned the rolls over, so they lay flat side up for the middle 20 minutes.

Serve

The rolls taste very nutty and are very filling. I like them instead of cereal bars as a snack or salad or soup. You can just enjoy it pure, just butter, both hearty (avocado cream, cheese, sausage) or sweet (nut nougat cream, jam) as any other bread also serve.

Anyone who wants to can do sweet or salty ingredients in the dough. This is recommended for. For example, if you want to serve them as finger food and the flavoring ingredients should not fall off the roll.


  • In the savory variant, e.g. with olives, grated cheese, onions, ham cubes ...
  • In the sweet variant, e.g. with coconut, cinnamon, raisins, cranberries, orange peel, lemon peel ...

Less is more! Muesli bars do not taste good if they contain too many different ingredients. I can then no longer tell the difference and the sensory overstimulation is unpleasant to me. 1-2 flavors are perfect.

Allergy Note: Without egg is the recipe vegan, In any case lactose free, conditionally gluten-free (Gluten from oatmeal is more compatible for some, couscous is from wheat and contains gluten) yeast-free. Beware of allergies to included nuts.
