flour sparrows

Mehlspatzen - fast, cheap and very good :-)
Ingredients for about 4 servings
- 500g flour
- 3-4 eggs (depending on size)
- salt
- Milk or soda

- Fill a large (eg noodle) pot half to three quarters with water, bring to a boil and then add 1-2 teaspoons salt into it.
- In the meantime in a bowl? It's easier and faster with a food processor? Mix the flour with 1 teaspoon of salt and the eggs and then slowly add milk or sparkling water (I prefer it because it makes the sparrows looser) until a medium-strong, rather viscous dough is formed.
- With a tablespoon of this dough, cut off the dumplings / cams and add to the boiling salted water. Switch the heat to the lowest heat and simmer for about 15 minutes.
- Then drain into a sieve or remove from the water with a slotted spoon.
- If you like, you can now swing the sparrows in butter in a pan or bake until crispy and / or add 1-2 beaten eggs (let it falter).
This fits very well, for example:
- Cucumber salad (with a lot of sour cream dressing)
- Leek vegetables (with a lot of cream sauce)
