Hello, as previously silent fellow reader, I would like to introduce myself today with this recipe: French onion soup with toasted baguette insert, au gratin.
ingredients
- 400g onions
- 40 g of butter
- 100 ml white wine, dry
- 800 ml of broth
- 2 cloves of garlic
- 2 tbsp olive oil
- 8 slices of baguette
- 100 g of grated cheese, Edam
- Chives, chopped
- Salt, freshly ground black pepper
preparation
- Peel onions and cut into thin strips, sauté in butter in a pot.
- Deglaze with wine and broth, salt and pepper, bring to a boil and cook on medium for 30 minutes.
- Press the garlic, mix with olive oil, spread the baguette slices with it and roast. Care should be taken that the garlic does not burn.
- Season the soup again, pour into plates and put in baguette slices. Sprinkle with cheese.
- Gratin under the grill of the preheated oven (200 C), sprinkle with chives and serve.
Tip:
If you do not want to use alcohol, you can replace it with a good meat stock. The acidity of the wine can be imitated by a small dash of vinegar.
