Hello, as previously silent fellow reader, I would like to introduce myself today with this recipe: French onion soup with toasted baguette insert, au gratin.

ingredients

  • 400g onions
  • 40 g of butter
  • 100 ml white wine, dry
  • 800 ml of broth
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 8 slices of baguette
  • 100 g of grated cheese, Edam
  • Chives, chopped
  • Salt, freshly ground black pepper

preparation

  1. Peel onions and cut into thin strips, sauté in butter in a pot.
  2. Deglaze with wine and broth, salt and pepper, bring to a boil and cook on medium for 30 minutes.
  3. Press the garlic, mix with olive oil, spread the baguette slices with it and roast. Care should be taken that the garlic does not burn.
  4. Season the soup again, pour into plates and put in baguette slices. Sprinkle with cheese.
  5. Gratin under the grill of the preheated oven (200 C), sprinkle with chives and serve.

Tip:

If you do not want to use alcohol, you can replace it with a good meat stock. The acidity of the wine can be imitated by a small dash of vinegar.
