Ingredients dough
- 200 g of flour

- 75 g of sugar
- 75 g of cold butter
- 1 egg
- 1 pinch of salt
Knead everything to a smooth dough (shortcrust pastry). Leave it in the fridge for about 1/2 hour.
For the quark mass
- 3 egg yolks
- 750 g (lean) cottage cheese
- 150 g of sugar
- 1 p. Vanilla sugar
- 1 packet of custard powder vanilla
- Juice of a 1/2 lemon
- 150 ml sunflower oil
- Mix 1/2 l of milk.
preparation
- First spread the shortcrust pastry into a greased 26er springform pan with 4 cm edge and spread the quark mixture over it.
- Bake in preheated oven at 200 ° C top down heat or 175 ° C convection or on gas level 3 for about 50 minutes (depending on tan).
- Before the baking time is up, whip the egg whites until stiff and pour in 100 g of sugar.
- Now put the meringue on the hot cake and bake for 2 more minutes at 150 ° C circulating air or gas 2 level.
- The gold droplets form as the cake becomes cold. It is best not to smooth the meringue on the curd mass, because then not so many droplets form.
- If you like it, you can also lift a tangerine tangerine (drain well) under the curds.
