Grandmother's carrot jam

Have found a recipe of my grandmother: carrot jam.

ingredients

  • 1 kg of carrots
  • 1 L of water
  • 2 tablespoons of lemon juice
  • a little lemon peel (untreated)
  • 250 g of sugar

preparation

  1. Scrape carrots and wash. Boil the lemon peel in water until soft, pass through a colander or spin through the mincer.
  2. Put the sugar in a saucepan and cook for 20 to 30 minutes. Finally, add the lemon juice.
  3. Put half a tsp of the jam on a dry cold plate. If no liquid settles and the mass drags a pellicle, the jam is sufficiently boiled.
  4. Fill in mason jars.
