Gratinated root vegetables - healthy and delicious!

Only recently I discovered in our supermarket these 1-kg bag with a root vegetable mix (country of origin: Denmark). This pack contained parsnips, parsley roots, carrots and beetroot.
Shortly decided I took so a pack and tried the same time from this recipe. It was a very tasty dish, vegetarian (or even vegan? - I do not know so exactly). In any case very healthy!
Ingredients for 3-4 servings
- 500 g potatoes
- 500 g beetroot
- 200 g of carrots
- 300 g parsnips
- 150 g parsley roots
- about 2 tablespoons of olive oil
- 3 tablespoons honey
- Juice of 1 orange
- 1 teaspoon lemon juice
- Spices: pepper, salt, ginger powder, chilli pepper spice preparation, caraway, a little nutmeg
- Herbs (fresh or frozen): some sage leaves, parsley, chives, dill (as you like)
- some grated cheese

It's easy!
The oven is preheated to 200 degrees top / bottom heat.
Step 1: Prepare potatoes and beetroot
First, I peeled the potatoes and the beetroot (in the latter, you should definitely wear disposable gloves!), Cut into large cubes or pieces, then put in boiling salted water and boiled for about 8 to 10 minutes.

Step 3: Prepare remaining root vegetables
I also peeled the remaining root vegetables and cut them into small pieces / slices.
Step 4: Prepare all the vegetables for the casserole dish
Then, in a bowl, I stirred olive oil, honey, orange and lemon juice, turned all the pieces of vegetables in it, put them in the baking dish, brushed with oil and seasoned with pepper, salt, ginger, chilli pepper, cumin and nutmeg.
Step 5: Bake vegetables
Now we went off for about 40 minutes on the lower rail in the preheated oven. That's it!
I then sprinkled the grated root vegetables with the herbs and grated some cheese, very yummy!
This fits very well a fresh salad (eg lamb's lettuce or rocket).
