Hash browns

ingredients

  • 1 kg of floury cooking potatoes
  • salt water
  • Salt, white pepper from the mill, 1 pinch of nutmeg
  • 2-3 tablespoons butter or margarine, 1 cup vegetable fat

preparation

  1. The potatoes must be washed thoroughly under running water and brushed off.
  2. Put the potatoes in a pot with plenty of salt water and let the potatoes cook until they are firm.
  3. Then you have to drain the potatoes, put off and immediately peel. Let the potatoes stand covered overnight.
  4. For the preparation you have to grate the potatoes into strips on a roast or a coarse grater with drop-shaped openings.
  5. Now you have to put the mass in a bowl and season it with salt, pepper and nutmeg. Finally, stir the melted butter or margarine underneath.
  6. You must now heat the vegetable fat in a frying pan and add the potato mixture in portions. Press the whole with a spatula or a spatula and let the underside turn golden yellow.
