Hefezopf standard recipe

This is a composition that I have tried myself and works well. Anyone who has experience in it like me, gets along well with it.

Ingredients:

  • 1 kg of flour (type 550)
  • 400 ml of milk
  • 60 g of yeast
  • 120 g of sugar
  • 150 g margarine / butter
  • 100 g whole egg (2 pieces)
  • 10 g salt
  • 5 g vanilla flavor
  • 5 g lemon flavor

Step 1

Put the ingredients in a bowl and (with the yeast and the salt do not throw in a heap, otherwise the yeast will be liquid, the result will be bad) knead for 2 minutes in a slow-moving hand mixer or kneading machine and then in a fast 5 minutes Knead gear.


Tip: if the dough is too much for you, then you can only take half, that works too. With the flavors I would then only give a fingertip to it, otherwise it will taste too one-sided.

After kneading, keep the dough covered for 5-10 minutes so that it can rest, or rather relax.

Next, work out the dough, so that it gets some kind of tension, but do not over-curl, otherwise your dough will crack! Now let it relax for another 5 minutes.

If you can braid and then the braid is braided, now comes the harder part. The baker wants yes, that his braids rise, so are larger. This is possible with the help of yeast. But that's not enough on its own, with some experience and a lot of trial and error, it will be done after the time.

So every baker has a fermentation room in his bakery, the fermentation room is responsible for the growth of bread or pigtails. That's exactly what I try at home. Take a bowl, fill it up with water and turn on the stove. It is important that the temperature does not exceed 40 C otherwise it coagulates that protein. The optimal temperature is between 25 - 27 C, 30 C is already the limit. Then when the right heat comes, let the braid ferment in the oven for 20-25 minutes.

Step 4

Do not forget to change the oven again!
After the braid has gotten a nice fermentation, we coat the braid with egg so that he gets a nice tan in the hot stove. Then, if you like, you can sprinkle sugar or almonds over it. Powdered sugar also works, but only after baking.

Step 5

Bake the oven in the oven, at a temperature of 190 C, for about 20-25 minutes. Then allow to cool and done.

(The more butter you give the heavier the braid is in the stomach ^^)
