Honey shrimp on rocket

For the construction site you need:
(as starter salad for 4-6 persons, as main course 2-3 persons)

1 pck of fresh rocket (mostly pre-washed)
1 bag (about 250-300g) untreated frozen shrimp
2 hands full of raisins
1-2 heaped tablespoons of good honey
2 big carrots
2-3 hands full of walnut kernels
2 hands full of planed Parmesan
1 pinch of chilli powder
fresh ground pepper
Either homemade balsamic dressing or Knorr salad coronation balsamic mixture

Schematic:
You can prepare the snipping works and the shrimp
- Wash the rocket again
- Peel the carrots and cut into thin slices with an asparagus peeler and add to the rocket in a bowl
- roughly chop walnuts and put aside
- Parmesan with a knife in rough shavings and set aside


- Heat the frying pan well and add some fat
- Roast the shrimp, then reduce the heat
- Add honey and raisins and continue to fry - over medium heat
- The thawed shrimp lose a lot of water, which can be combined well with the Knorr salad spice mixture. Simply skim off the required amount for the balsamic dressing with a tablespoon.
- Season the honey-fried shrimp and raisins with a pinch of chilli powder and a little pepper.
- The shrimp are ready when all the moisture has evaporated, the raisins are slightly puffed up and everything is in the pan with a fine glassy honey coating.

Mix the arugula and the fine carrot strips with the balsamic dressing well and trap on large flat plates. Then sprinkle the nuts and Parmesan over it. On top of it come the honey shrimp. Finally sprinkle with ground pepper.
