Honeydew melon and goat cheese salad
Ingredients:
1 honeydew melon / galia melon
200 g goat's cheese (alternatively sheep's cheese or gorgonzola)
150 g bacon (as lean as possible) otherwise raw ham
1 small onion
3-4 tablespoons of pine nuts
3-4 tbsp oil
Salt, pepper, sugar, lemon juice
if necessary, a good hand rocket
Preparation:
Dice the melon and cheese and place in a bowl
Sauté bacon / ham, add onions until lightly browned - add the melon-cheese mixture
Mix a dressing of oil, lemon juice, salt, pepper and sugar and add to the salad
Roast pine nuts and sprinkle over the salad.
Visually, it looks twice as pretty with a few Rucola leaves (and it tastes delicious too).
Vegetarians can also omit the bacon / ham - still tastes good. Fish fans can use salmon strips instead of bacon / ham (but do not fry them first).
