Instant cucumbers or Schüttelkürken - basic recipe

Basic recipe for cucumbers and gherkins (Schüttelgurken). You can always make this recipe as long as you get fresh cucumbers and herbs (or frozen ones), it also works with zucchini.

ingredients

Quick cucumber


  • 7.5 kg of cucumbers
  • 300-400 g of sugar
  • 100 g salt (two hands full)
  • 1/2 L vinegar (10%)
  • 1 pck inserting spice
  • Garlic (2 toes) and onions (4 pieces)

preparation

Wash the cucumbers, then peel and core, then mix the garlic and onions with the cucumbers. Add the sugar, salt, vinegar and cucumber spice to the cucumbers and mix well.

I always add a pinch of citric acid (because of its shelf life), but it does not necessarily have to be.

Shake every 6-8 hours, after 24 hours you can taste.

Gherkins (shakers)

  • 2.5 kg of peeled cucumbers
  • 125g onions
  • 1 tbsp salt
  • 1/8 L vinegar (10%)
  • 65-70 g of sugar
  • Mustard seeds 1/2 packet
  • Dill as needed and taste

preparation

Then wash and core the cucumbers, mix the dill and onions with the cucumbers. Add the sugar, salt, vinegar and mustard seeds to the cucumbers and mix well. Add a pinch of citric acid at the end (for durability).

Shake every 6-8 hours, after 24 hours you can taste.

Extra tip:

Since this is a basic recipe, you can of course add one or the other or omit something. I had z. For example, you could add paprika in the garden, which I had harvested abundantly this year. If you want, you can also add horseradish, fresh herbs or laurel leaves, pepper and, and, and with. If it's too sour, too salty or too sweet, just leave one or the other.
