Rice peppers and tomato bake

If you want to go fast, I like to make this spicy rice-paprika-tomato casserole with pesto.
Ingredients for 4 servings:
- 2 cooking bags of rice
- 2 peppers
- 2 tomatoes
- 200 g meat sausage
- 200 ml of sour cream or sour cream
- 2 eggs
- 2 tablespoons granulated vegetable stock
- 2 tbsp pesto verde
- Salt pepper
- herbs of Provence
- 150 g of grated cheese
- 1 tsp of oil for the mold
preparation
- First, the oven is preheated to 200 ° C.
- Cook the rice as required, then drain, mix with the spices and cover the bottom of a baking dish greased with the oil.
- Then spread the peppers into strips, sliced tomatoes and meat sausage in slices or strips.
- Whisk the sour cream or sour cream with eggs, a little salt, grained vegetable broth and pesto, if necessary dilute with a little milk and pour over it.
- Finally, sprinkle the grated cheese over it and put it in the preheated oven. After about 30 minutes, the casserole is then ready.
Tip:
Instead of meat sausage, I also take more and more ham cubes or salami.
