Rice peppers and tomato bake

If you want to go fast, I like to make this spicy rice-paprika-tomato casserole with pesto.

Ingredients for 4 servings:

  • 2 cooking bags of rice
  • 2 peppers
  • 2 tomatoes
  • 200 g meat sausage
  • 200 ml of sour cream or sour cream
  • 2 eggs
  • 2 tablespoons granulated vegetable stock
  • 2 tbsp pesto verde
  • Salt pepper
  • herbs of Provence
  • 150 g of grated cheese
  • 1 tsp of oil for the mold

preparation

  1. First, the oven is preheated to 200 ° C.
  2. Cook the rice as required, then drain, mix with the spices and cover the bottom of a baking dish greased with the oil.
  3. Then spread the peppers into strips, sliced ​​tomatoes and meat sausage in slices or strips.
  4. Whisk the sour cream or sour cream with eggs, a little salt, grained vegetable broth and pesto, if necessary dilute with a little milk and pour over it.
  5. Finally, sprinkle the grated cheese over it and put it in the preheated oven. After about 30 minutes, the casserole is then ready.

Tip:

Instead of meat sausage, I also take more and more ham cubes or salami.
