Künefe - a Turkish delicacy

With us there are on special occasions, when several people are visiting, black Chai and Künefe, instead of coffee and cake.

This also goes down well with my German family and friends. It is relatively easy and quick to prepare.


ingredients

From the Turkish supermarket: (so far I have unfortunately got nowhere else)

  • fresh Tel Kadayif 500 g (vermicelli, also called angel hair)
  • 1 cup Altin Kaymak 200 g (cream product, 23% fat)

From the simple supermarket:

  • 250 g sheep's cheese
  • 200 g butter
  • 900 g of sugar
  • 700 ml of water
  • 3-4 teaspoons lemon juice
  • 1-2 packs of chopped pistachios (other nuts if you prefer)

preparation

  1. Rub down the sheep's cheese and set aside.
  2. Melt butter on a baking sheet (about 30x40) and distribute well.
  3. Meanwhile, pull apart and loosen up Tel Kadayif.
  4. When the butter has melted on the plate, half of the Tel Kadayif (250 g) is evenly distributed on it and pressed with your hands, so that the butter can be absorbed well.
  5. Then spread the entire feta cheese evenly over it.
  6. Then spread and squeeze the rest of Tel Kadayif (250g) as before.
  7. Bake in preheated oven at 200 degrees for 25 minutes.
  8. During the baking time, boil the water with the sugar for 5 minutes, add lemon juice and bring to a boil again.
  9. When the Künefe is ready, it is taken out of the oven and left for another 1-2 minutes.
  10. Then evenly, preferably with a ladle, pour over the syrup.
  11. The kaymak and chopped pistachios are served, each in a small bowl. And of course, do not forget the black chai :-)
