Total preparation time: 1 hr. 30 min.

Do it yourself is great and also "in". Here comes a recipe for pretzels that takes a bit of time but is not that hard to make yourself.

The preparation time is about 1 hour. Rest time 1 ¼ hours, in between you have good time to do other things.

ingredients

  • 1/2 cube of fresh yeast
  • 1 tablespoon of sugar
  • 1/4 l of lukewarm water
  • 500 g wheat flour
  • 1 tsp salt
  • 15 g of soda and coarse salt

preparation

  1. The yeast is dissolved together with the sugar in a little lukewarm water. Then the whole thing has to be covered, go in a warm place for 15 minutes.
  2. Then mix with the flour, the remaining water and the salt. Strongly knead into a smooth dough. Cover this again and let it rest for 1 hour in a warm place.
  3. The dough is again kneaded vigorously after the rest period and divided into 10 equal pieces.
  4. Each piece of dough is then shaped into a roll of about 30 cm in length, the center of which should be about the size of a thumb and the ends of which should be pencil-thin.
  5. From these dough rolls, the pretzels are now formed, while pressing the two thin ends on the thicker center piece.
  6. Now the soda is dissolved in 1 L of water and brought to a boil. IMPORTANT: Please do not allow the lye to come into contact with aluminum or the skin because it is corrosive.
  7. Keep 2 pretzels in the boiling broth for about ½ minutes with kitchen tongs (heat-resistant!) And turn frequently.
  8. Drain briefly, place on a previously prepared and greased sheet, then sprinkle with coarse salt.
  9. Bake in a preheated oven at 220 degrees for 30 minutes until golden brown. Best fresh on the table and serve with butter.
