Make yeast water - an alternative for yeast - yourself

Yeast water is a good natural alternative for industrially produced yeast or sourdough. The home-made yeast water has many advantages. It is very easy to make without chemicals and is much better tolerated than the normal yeast that you can buy.

It should have a positive effect on the intestinal flora and prevent blockages. Breads, bread rolls and other yeast pastries that are baked with yeast water are better tolerated, because you let the dough go for a long time.

In the production of yeast water, organic substances are converted (fermented) into acid, gas and alcohol. Suitable ingredients for alcoholic fermentation are z. As dried dates, currants, raisins, plums or apricots. You can also use strawberries, flowers, fruits or other edible fruits. You also need brown sugar or honey, boiled, lukewarm cooled water and a closable bottle through whose bottleneck the fruits fit and can be removed again.


I tried it with dates.

Ingredients for 0.75 liters

  • 2 dates
  • 50 g brown sugar (raw cane sugar)
  • 0.75 L of boiled, lukewarm water
  • and a bottle with screw cap

All ingredients are filled into the clean, hot rinsed bottle, this is then tightly closed and everything shaken vigorously. Now let the bottle stand at room temperature for 8 to 10 days and shake it well twice a day. But before you have to open it carefully each time to let escape the gases forming, and even after shaking open again briefly. By shaking the yeast is activated in the water. Already on the 2nd to 3rd day, the first small bubbles form on the surface and after 8 to 10 days, the yeast water is then ready for use.

It smells of must, apple or a mixture of beer and cider. But it is important that no mold forms! Stored in the refrigerator, the yeast water is then stable for several weeks.


Use of the yeast water:

For recipes for pizza or bread, you can replace the normal amount of liquid (water) or only part of it with yeast water. The dough can then be prepared as usual and it is best left to rest overnight.

Refresh:

If the yeast water is used up to about 100 ml, you can remove the dates. The remainder is then refilled with fresh, boiled, hand-warm water to 0.75 (or 1 liter) and also adds again 50 g of cane sugar. You can also leave the dates in the bottle. Then everything is shaken vigorously again and as at the beginning you leave the bottle and shake again twice a day.

Since some of the water is already fermented, the production of the yeast water takes only about 2 to 4 days this time. Smells like musts again, has fermented long enough and can now be used.
