Mashed potatoes with a difference (purple)

Just choose any mashed potatoes recipe of your choice.

The important thing is: do not take yellow potatoes. Take for example the Vitelotte (also Negrèse, Truffe de Chine or Blue Potato) instead of the yellow one. More information about the potato is also available in Wikipedia, pictures on the Google image search "Vitelotte".

The taste is accordingly nutty due to the intensive Vitelotte, earthy and therefore very potato-like. Ideal for a "colorful blob" on Sundays to present something "familiar" differently.


Tip applies to all vegetables in "blue" (carrots, tomatoes, beans, etc. pp).

The taste is often different, usually more pleasant than the "standard commodity". Yellow zucchini tastes more fruity, not so harsh - White eggplant does not taste so musty.

True to the motto, I use these fruits, which you see more often to get more color on the plate.
