Peach nut cake

For the dough:

  • 125 g of butter
  • 125 g of sugar
  • 2-3 eggs
  • 1 pinch of salt
  • 4 drops of lemon or bitter almond flavor
  • 200 g of flour
  • 1 teaspoon Baking powder
  • 2-4 tablespoons milk
  • 100 g of ground hazelnuts
  • 500 g fully ripe but still firm peaches

Preparation:

  1. Beat the butter until foamy in a bowl. Add the sugar gradually, then add the eggs, salt and flavor and beat until the sugar is dissolved.
  2. Mix the flour with the baking powder and add it by the sieved spoonful under the butter mixture. Add the milk until the dough falls off the spoon.
  3. Add the hazelnuts and fill the dough into a 26 cm diameter greased springform pan, smooth.
  4. Pour the peach over with boiling water, skin, halve and core. Distribute on the dough, squeeze and bake in a preheated oven at 180-200 degrees for about 60 minutes.
  5. Let cool and serve dusted with powdered sugar. Good Appetite!
