Paprika comes in many colors. I like the red the best. I prefer simple recipes that contain only a few different foods. Since the taste of the individual ingredients comes to their own advantage and they are easily digestible.

In the following recipe, paprika (as a pod and as a spicy seasoning) is combined with lemon (as a juice and as a gelling agent). The jelly I have prepared with lemon pectin, which is the gelling agent, which is often included in gelling sugar. When used alone, one can determine the amount and type of sweetener itself. Salt does not need the recipe as it is combined with food that already contains salt.

  • 1 large red pepper (cleaned and diced approx. 100 g)
  • 1 teaspoon ground paprika (rosy-sharp)
  • 1 teaspoon lemon juice (apple juice is also possible)
  • 1 tablespoon of sugar
  • ½ tsp lemon pectin (it is also apple pectin or Konfigel, a sugar-free gelling agent from the health food store or health food store)

preparation

  1. Wash the peppers and peel with the peeler (the jelly becomes finer and easier to digest).
  2. Cut the peppers, remove the kernels and white spots, and cut into small cubes.
  3. Put lemon juice and diced peppers in a saucepan and puree with the blender and bring to a boil
  4. Mix the paprika and pectin with the sugar and let it trickle in with constant stirring, bring the mixture to a boil and simmer gently for about 5 minutes (always stirring).
  5. Hot fill in a clean jam jar, seal and allow to gel. It takes at least an hour, better over night.

Since the gummy jelly contains no preservatives and little sugar, I always prepare little at a time and fill it into small glasses. You should consume a glass that has broken in a week within one week and of course store it in the fridge in between. The jelly tastes on cheese bread, both to strong goat cheese and mild cream cheese, but also as a dip for fresh vegetables or as barbecue sauce. The jelly gels very well, so you can cut off small cams. Green peppers, spring onions or corn are suitable as decorations.
