Mashed potatoes with whisked eggs

This recipe brought my mother from Italy and changed something. Quick and delicious!
ingredients
- 500 g of floury potatoes
- 200 g creme fraiche
- 50 g of margarine
- 2 fresh eggs (room warm)
- 4 tablespoons of parmesan grated
- white pepper to taste
- to taste herbal salt
preparation
- Cook the potatoes in water for 20 - 25 minutes.
- Drain, peel and cut small. Crush with potato masher in a large bowl.
- Add margarine in pieces and creme fraiche and mix.
- Whisked eggs and stir.
- Add the parmesan and spices and stir until smooth.
tip
Put in the oven to warm up, at 120 degrees. The reason: in the pot or in the pan on the hotplate, the puree loses its taste.
