Mashed potatoes with whisked eggs

This recipe brought my mother from Italy and changed something. Quick and delicious!

ingredients

  • 500 g of floury potatoes
  • 200 g creme fraiche
  • 50 g of margarine
  • 2 fresh eggs (room warm)
  • 4 tablespoons of parmesan grated
  • white pepper to taste
  • to taste herbal salt

preparation

  1. Cook the potatoes in water for 20 - 25 minutes.
  2. Drain, peel and cut small. Crush with potato masher in a large bowl.
  3. Add margarine in pieces and creme fraiche and mix.
  4. Whisked eggs and stir.
  5. Add the parmesan and spices and stir until smooth.

tip

Put in the oven to warm up, at 120 degrees. The reason: in the pot or in the pan on the hotplate, the puree loses its taste.
