Sweet bran bread with honey and apricots

A very tasty, fruity breakfast bread with a crunchy crust, is the sweet bran bread with honey and apricots!

You need the following ingredients:

175 g whole wheat flour, 60 g bran, 30 g brown sugar, 1 teaspoon soda, ½ teaspoon baking powder, ½ tsp salt, 60 g dried apricots, 50 g raisins (or cranberries), 200 ml buttermilk, 1 egg, 50 g honey.


First, mix all the dry ingredients and the chopped apricots in a large bowl. Then the egg is beaten, whisked with the honey and the buttermilk and added to the dry mixture, briefly stirred in until everything is well mixed. This dough is then placed in a well greased or lined with baking paper box shape and smoothes the surface.

Baking is then about 60 minutes at 175 ° C in a preheated oven. Cover it with baking paper or foil just before the end of the baking time so that it does not get too dark!

Then let the bread cool in the mold for 10-15 minutes, then cool completely on a wire rack.

I baked the bread in a small box shape (24 cm long), for a normal sized shape you need twice the amount of ingredients.
