Crunchy chocolate oat cookies

For about 40 pieces of these delicious cookies:

  • 40 g of butter
  • 20 g of coconut oil
  • 120 g of pungent oatmeal
  • 120 g of sugar (with brown sugar they are especially crispy!)
  • 100 g of dark chocolate
  • 1 egg
  • 70 g of flour
  • ½ tsp baking powder
  • 1 pinch of citric acid
  • 1 pinch of deer horn salt

preparation

  1. The oven is preheated to 200 ° C.
  2. Butter and coconut oil are melted in a small pot and then cooled down a bit.
  3. Then the oatmeal comes with the sugar and the grated chocolate in a bowl and are mixed. Now you pour the cooled butter-fat mixture over it and stir well, then the egg is stirred underneath. The flour is mixed with baking powder, staghorn salt and citric acid and gradually stirred into the mass until a crumbly dough is formed.
  4. From this you form with moist hands about walnut-sized balls and places them in sufficient distance on a baking paper or baking foil-coated sheet and presses them to flat, round cookies.
  5. These are then baked for about 8 minutes at 200 ° C in a preheated oven, the edge should be lightly browned and the cookies are a little firm.
  6. Then I let it cool briefly on the baking tray, before I put it on a wire rack to cool completely.

These cookies are very crispy and they stay that way for a long time if kept in a sealed container - if they survive so long, which is almost never the case here !? ;-)
