ingredients

  • 150 g of salt
  • 100 g of sugar
  • 3 bunch dill
  • 1 tbsp juniper berries
  • 1 teaspoon of white peppercorns
  • Zest of a lemon
  • 1 large salmon fillet with skin about 20 cm

preparation

  1. Rinse salmon and pat dry and place in a casserole dish.
  2. Pound spices in mortar.
  3. Chop dill small.
  4. Mix the salt, sugar, spices, lemon zest and dill over the salmon, cover with foil and put in the fridge for at least 12 - 16 hours.
  5. Then remove the salmon from the liquid and pat dry. It can then be sliced ​​in fine slices.
