ingredients
- 150 g of salt
- 100 g of sugar
- 3 bunch dill
- 1 tbsp juniper berries
- 1 teaspoon of white peppercorns
- Zest of a lemon
- 1 large salmon fillet with skin about 20 cm
preparation
- Rinse salmon and pat dry and place in a casserole dish.
- Pound spices in mortar.
- Chop dill small.
- Mix the salt, sugar, spices, lemon zest and dill over the salmon, cover with foil and put in the fridge for at least 12 - 16 hours.
- Then remove the salmon from the liquid and pat dry. It can then be sliced in fine slices.
