Ingredients for a 28er Springform

For the dough:

  • 150 g of soft butter
  • 150 g of sugar
  • 1 pck of vanilla sugar
  • 1 egg
  • 300 g of flour
  • ½ pck of baking soda
  • 50 g of cocoa powder

For the filling:

  • 250 g butter
  • 200 g sugar
  • 1 pck of vanilla sugar
  • 500 g of low-fat quark
  • 3 eggs
  • 1 pinch of salt
  • 1 pck. Pudding powder (vanilla)
  • 2-3 small apples
  • a few drops of lemon juice

preparation

  1. For the dough, beat the soft butter with sugar, vanilla sugar and egg until creamy. Mix the flour with baking powder and cocoa, add seven, gradually to the butter-sugar-egg mixture and knead everything with the dough hook of the hand mixer to a crumbly dough. Then form into a ball and wrap in cling film for at least 30 minutes.
  2. Meanwhile, wash the apples, cut into quarters, remove the core and cut the quarters into small cubes, drizzle with a few drops of lemon.
  3. Preheat the oven to 180 degrees top / bottom heat.
  4. Grease the bottom of the springform pan or cover with baking paper. Press two thirds of the chilled dough as a base into the springform pan, forming a small margin.
  5. For the filling, stir the soft butter with sugar and vanilla sugar until creamy, then add the quark and mix everything. Separate the eggs, stir the egg yolks and the custard powder into the quark mixture. Then carefully fold in the apple cubes.
  6. Carefully lift the egg whites, beaten stiffly with 1 pinch of salt, under the quark mixture, place them on the ground and smooth them. Finally, from the remaining dough form crumble and spread on the filling.
  7. Place the dish on a grid in the lower third of the preheated oven and bake the cake for about 60 minutes. Cover the pluck if necessary before the end of the baking time.
  8. Then let the cake cool in the mold with the oven door slightly open. Only then remove from the oven and remove from the mold.
  9. The pluck cake can be dusted with icing sugar before serving.
