Potato Schnitz & Spatza (Gaisburger March - Swabian)

500g potato = grombira

1-1 / 2l good meat broth

500 spaetzle from the bag


or better yourself
(4 eggs, 500g flour, salt, 1 / 4l water, better sparkling water = Spaetzle)

2-3 onions

Beef cube or sausage cubes according to taste



Peel the potatoes, cut into small cubes, do not cook until soft, place on the side.

Cook spaetzle or make your own.

(Mix all ingredients together, beat well, say until blistering, but do not even use it, soda water will help to make the spaetzle loose.)
Then either scrape or press through the press, when they float up, take out in cold water, then arrange on a plate.


Boil the blanched stock, add the potato and the spits, sauté the onion into a little fat and add.

Meat or sausage to taste.
