Purple bean stew with Kassler

We plant purple beans in the garden (also called "Feuerbohne"). When the pods have matured, we will pulp the beans and leave them to dry.

ingredients

  • 250-300 g purple beans
  • 3-4 potatoes
  • A piece of Kassler (comb or boneless)
  • Birch trees / some carrots
  • 1 bay leaf / 2-3 peppercorns
  • Onions and possibly garlic cloves
  • Salt for potatoes and beans

preparation

The day before we cook the kassler with lots of greens, laurel leaf and peppercorns. If you like, you can do 2-3 cloves of garlic. Without adding salt!

Rinse the beans with cold water and soak in plenty of water overnight. The next day, the beans are cooked with a little salt and the soaking water in the pressure cooker for about 30 minutes. At the same time we cook potato pieces in an extra pot. We heat the casserole stock and add it to the beans and potato pieces. The Kassler we cut into small cubes u. give it to you.

The stew is enough for 2 days. Who wants to taste with sugar and vinegar. We'll leave that for useless calories. Who wants a pure protein diet, leaves the potatoes away. The more often the stew is boiled up, the better it tastes.
