Quiche with spinach and gorgonzola

You need:

  • 200 g of flour
  • 100 g of lean quark
  • 5 tbsp sunflower oil
  • a bit of salt
  • 300 g leaf spinach (fresh or frozen)
  • 4 spring onions
  • 2 cloves of garlic
  • Salt, pepper, nutmeg
  • 200 g of Gorgonzola
  • 150 g of creme fraiche
  • 2 eggs
  • 50 g almond flakes

preparation

Mix a quark oil dough out of flour, quark, 4 tablespoons oil and a pinch of salt and leave to cool for about 20 minutes. In the meantime clean the leaf spinach, wash, and drain well (or thaw).

Cut the spring onions into thin rings, finely chop the garlic cloves and fry both in 1 tablespoon of oil. Add the spinach and steam. Now season with salt, pepper and nutmeg.


Whisk the gorgonzola with crème fraiche and the eggs and stir in the spinach mixture.

Lay out the dough in an approx. 29 cm quiche form and add the spinach mixture. Sprinkle with the almonds and bake at 180 ° C.

So very low in calories, this quiche is not. A large piece (a quarter of the cake) has about 730 kcal. But for anyone who wants to give up meat in the now-cracking Lent this is a really delicious recipe.
