Quick pasta pot with mushrooms and spinach - vegetarian

If you want to go really fast, I highly recommend this super fast, meatless and very tasty dish, which is on the table in less than half an hour! Most of the ingredients are determined in the house, otherwise can be varied with vegetables.

Ingredients for 4 servings

  • 500 g mushrooms
  • 1 onion
  • 1 clove of garlic
  • a little clarified butter
  • 500 g noodles (eg fettuccine, Spirelli, Penne, Farfalle, Spätzle ...)
  • 1 L vegetable stock
  • 200 ml of cream
  • Salt, pepper, chilli flakes
  • 200 g leaf spinach (fresh or frozen)
  • 100 g of grated cheese
  • roasted sunflower or pine nuts

preparation

  1. If using TK spinach, let it thaw overnight in the refrigerator.
  2. The mushrooms are cleaned and sliced, the onion and clove of garlic peeled and finely diced and on a coated pan (or even in a large pot) briefly with a little clarified butter.
  3. Then add the pasta, the vegetable stock and the cream to the mushrooms, onion and garlic cubes, season well with salt, pepper and chilli flakes, bring everything to a boil and simmer for 10 minutes at medium temperature.
  4. In the meantime, the kernels are roasted.
  5. Then add the spinach and the grated cheese, let it boil again and continue to simmer for 2 to 3 minutes.
  6. Now you can perhaps spice it up again and serve the dish with the roasted seeds.

Tip: Instead of spinach you can also other vegetables such. B. Kohlrabi, cauliflower or broccoli, but this must then be given together with the pasta, etc. in the pot.
