Recipe for spiked pork tenderloin
Ingredients for 3-4 people:
1 pork fillet about 800 g
100 g Gouda, medium old
Pepper salt
sweet cream for the sauce
Roast stock if desired
Preparation:
Wash the meat and dry it. I cut it always in two halves, then you can handle it better in the pan. Cut the cheese into 8-10 finger-thick and 5-6 cm long pegs and use it to chop the fillets (at right angles to the grain). Season with salt and pepper, sauté the two halves of the filet on all sides until crispy and continue to fry on a low flame with the pan covered for about 15 minutes. The cheese melts in part. Finally, bring the cream with the gravy and bring to a boil - possibly with roast stock.
There are (rosemary) potatoes and green salad.
