Salmon and cream cheese Spinach roll

A summery fresh dish of 3 layers: salmon, spinach and cream cheese.

Ingredients for 6 - 8 people
- 1 package of creamed spinach (frozen food)
- 4 eggs
- 200 g double cream cheese
- 1/2 lemon
- 200 g smoked salmon in slices
- salt
- pepper
- nutmeg
preparation
- Thaw spinach and drain. Separate the 4 eggs and add the egg yolk to the spinach. Season with pepper, salt and nutmeg and stir well.
- Beat the egg whites until stiff and place under the egg-spinach mixture. Lay out the baking tray with baking paper and spread the mixture evenly on it.
- Bake in preheated oven at 180 ° for 10-12 minutes.
- In the meantime season the cream cheese with the juice of half a lemon, pepper and salt and stir.
- After the baking time, topple the spinach dough by covering it with a clean tea towel and turning it around. (As with a biscuit roll.) Carefully peel off the baking paper.
- Allow the green-yellow dough to cool slightly and spread the cream cheese evenly over the dough. Then place the salmon slices on top and roll in from the longest side.
- Wrap the roll in cling film and refrigerate for at least 1 hour.
- Then it is sliced and is just as delicious the next day.
I like to serve pasta, but you can also order a slice of baguette.
