Salmon steaks with lobster-dill sauce

Today we were once again looking for fresh fish, which I basically buy from the fishmonger I trust on the market. I do not want to deprive you of the recipe for the preparation of salmon steaks, and I hope you like it as much as we do.
Ingredients for 2 persons
- 2 fresh salmon steaks
- Herb salt, freshly ground pepper
- Butter lard for frying
For the sauce:
- 1 tbsp cognac
- 1/2 cup of cream light
- 1 bunch of fresh dill
- 60 g lobster paste
- 350 ml of water
- Salt, freshly ground pepper
- Potato croquettes, amount as desired and appetite of persons (I had used TK mini croquettes)
For the salad:
- 1 cucumber
- some cherry tomatoes
- 1 onion
- 1 - 2 garlic cloves
For the salad additionally:
- white balsamic vinegar
- olive oil
- Herbs according to supply and taste
- Salt, pepper, some mustard and who likes
- 1 pinch of sugar and a good dash of cream
preparation
- The salmon steaks are seasoned with pepper and herbal salt and set aside for a moment.
- In the meantime, I make the salad sauce from the above ingredients, peel and slice the cucumber and halve the tomatoes.
- For the lobster sauce, I heat the water in a pot and add the lobster paste with stirring, let boil and season with half a bunch of chopped dill, pepper, salt and with the cognac and half cup of cream light. I keep the sauce warm on a little heat.
- For the croquettes I heat the oven to 180 degrees. The croquettes take about 10 minutes to finish.
- To fry the salmon steaks, I add the butter in the pan and then the fish in the hot fat. Roast the fish steaks on each side for about 5 minutes maximum and keep warm.
- Then mix the salad with the dressing and arrange the plates appetizing with the salmon steaks and the croquettes. Add a little fresh lemon and then you can eat.
