Simple but difficult to impress oven-fish

Ingredients for 4 persons:
- 2 kg whole fish, in the picture you can see salmon trout
- 1/2 stick leek
- zucchini
- broccoli
- carrots
- cherry tomatoes
- kohlrabi
- 1 pepper
- 1 fennel
- 1 lime
- 3 cloves of garlic
- 3 star anise
- 1 tbsp red pepper
- 5 pieces of cardamom
- 1/2 tsp coarse salt (if necessary, normal table salt is also available)
- 3 sprigs of rosemary
- 3 sprigs of thyme
- 150ml olive oil
preparation
- Fish, clean and shed, cut cross-shaped on the thicker meat sides several times and place on a baking sheet.
- Clean the vegetables, chop them and put them under, in and on the fish.
- Place the lime on the fish, garlic cloves and herbs carefully in and around the fish.
- Sprinkle with the spices and then sprinkle with olive oil.
- Cook in a preheated oven for about half an hour per kilo of fish at 200 degrees Celsius.
