Simple but difficult to impress oven-fish

Ingredients for 4 persons:

  • 2 kg whole fish, in the picture you can see salmon trout
  • 1/2 stick leek
  • zucchini
  • broccoli
  • carrots
  • cherry tomatoes
  • kohlrabi
  • 1 pepper
  • 1 fennel
  • 1 lime
  • 3 cloves of garlic
  • 3 star anise
  • 1 tbsp red pepper
  • 5 pieces of cardamom
  • 1/2 tsp coarse salt (if necessary, normal table salt is also available)
  • 3 sprigs of rosemary
  • 3 sprigs of thyme
  • 150ml olive oil

preparation

  1. Fish, clean and shed, cut cross-shaped on the thicker meat sides several times and place on a baking sheet.
  2. Clean the vegetables, chop them and put them under, in and on the fish.
  3. Place the lime on the fish, garlic cloves and herbs carefully in and around the fish.
  4. Sprinkle with the spices and then sprinkle with olive oil.
  5. Cook in a preheated oven for about half an hour per kilo of fish at 200 degrees Celsius.
