Steamed lamb's lettuce

Today I have another tip for forgetfulness. It happens to me that I buy corn salad and then have no time to process it. At the latest after 2 days he starts to become "lommelig".

Now I have tried something. I let the salad "swell" in lukewarm water for 2 hours and then cleaned it. Sometimes the water bath helps and you can also eat it as a salad. If not, then:

Melt some butter / margarine in the pot, fry chopped onion, add lamb's lettuce and steam as spinach. Season with salt, pepper and a little nutmeg. If you like, you can stir in some cream, sour cream or cream cheese. And chopped pine or walnuts ...

Classic mashed potatoes and fried eggs can be served for this. Or try some noodles or spaghetti.
Delicious I tell you !! Especially for those who do not like spinach! (Which one I belong to!)
