Sweet sorrel soup

ingredients

  • 1.5 liters of water
  • 60 g starch or rice flour
  • 60 g currants at will
  • Lemon peel
  • 300 g sorrel
  • sugar

preparation

The water is brought to a boil, the currants and the lemon zest cooked for 15 minutes, the cleaned finely chopped sorrel is added and steamed soft, bound with starch and seasoned with sugar is left to simmer for a short while. If you want, you can puree the soup with the passier bar.

Sorrel can be grown in the garden, you can find it from spring to autumn but also in many meadows. Only young leaves are harvested. If a meadow is mowed, the sorrel drives out again and can be harvested again. Otherwise use only the upper tender leaves.
