White beans with pork

This recipe for a sauce of white beans and pork is easy to prepare, goes well with pasta and tastes delicious.

ingredients

  • 500 g of white beans
  • 600 g of pork from the shoulder or neck
  • 2 tablespoons of butter lard
  • 5 tablespoons flour
  • 2 carrots
  • 1 onion
  • 2 cloves of garlic
  • parsley
  • Salt, pepper, paprika, instant powder

preparation

  1. Wash the white beans in the sieve the evening before, place in a large pot with plenty of water and let soak overnight. I infuse them in the pot in which they are cooked. I always cook legumes in the pressure cooker.
  2. The next day pour away the soaking water, so they are better digestible, pour fresh water to the beans, it must be about 10 cm above the beans, they swell again. Cook in the pressure cooker for 25 minutes, please do not salt. (In the normal pot, the beans need about 60 minutes).
  3. In the meantime, dice the meat and carrots, chop the onions and garlic.
  4. Sauté meat in the pan, season, add onions and fry for a short time.
  5. Add all the ingredients to the boiled beans, season and season, if there is not enough liquid, add water.
  6. Close the pressure cooker and cook for 5 minutes.
  7. Make a light roux in a small pan.
  8. Slowly add the roux to the cooked beans, bring to a boil, season to taste. Sprinkle parsley over it.
  9. In between, I cooked the noodles.
