A bread with spelled wholemeal flour and sunflower seeds

I bake my own bread, I know what's inside and I can bake it the way I want it. The price / quality ratio to a good baker's bread is great, just those cheap bread products from some discounters that somehow taste like cardboard, so not my taste, and here I can play with ingredients like a composer when he scores for a special piece writes.

Also for Neubäcker, it is not difficult to bake a bread, but you should already have at least a good 3 hours ready for it, so for preparation and then, of course, the baking itself, but you will be rewarded, with a great taste. Maybe not right the first time, but you get better with every bread you bake.

Here I present you a recipe that is there after the 4th bread, where it should be, in terms of taste. A bread with wholemeal spelled flour with sunflower seeds.


  • 1 kg spelled wholemeal flour
  • 2 pck. Dry yeast a 7 g
  • 25 g whole grain natural sourdough dry
  • Warm 750 ml of water
  • 100 g sunflower seeds
  • 1 tsp salt

I make the bread spice myself:

  • 1 tbsp fennel seed
  • 1 tbsp coriander seed
  • 1 tbsp caraway whole
  • 1 tbsp aniseed

Finely grind the spices in a spice mill. The spices last me for 2 loaves with 1 kg of flour.
