Quince poppy seed cake with butter crumble

Quince-poppy-seed cake with butter crumble: In keeping with the current quince time, I've experimented something again? (as my family always says) and tried the combination of quince with poppy seeds this time around.

I think, I succeeded very well, the two fit together really wonderful - and the "family" has also tasted this cake very well!


And here's my tip for those who have the desire to bake, for a 28er Springform you take the following:

For the filling

  • about 500 g of ripe quince
  • 70 g of sugar
  • plenty of 400 ml of water
  • 1 teaspoon lemon juice
  • 1 pck of poppyseed
  • 2 eggs
  • 1 tablespoon of sugar
  • 1 pinch of salt

For the dough

  • 400 g cake flour (Type 550)
  • ½ pck of baking soda
  • 200 g of sugar
  • 1 pck of vanilla sugar
  • 1 pinch of salt
  • 250 g soft butter
  • 1 tbsp oil

preparation

  1. First, I brushed the quinces well with warm water, quartered, peeled and freed generously from the core housing, then cut into narrow columns. I boiled the water with sugar and lemon juice, then added the quince slices and steamed over medium heat for about 10 minutes, then drained on a sieve and allowed to cool.
  2. Now preheat the oven to 190 degrees (top / bottom heat).
  3. I mixed the flour mixed with the baking powder with sugar and vanilla sugar and kneaded it with the soft butter and the oil to a crumbly dough. For this I have taken the hand mixer with the dough hook.
  4. I then put about two-thirds of the dough as a base into the baking paper laid out (the edge greased) Springform, pressed as a bottom with a small edge and slightly stabbed the ground with a fork. Then I distributed the drained quince columns.
  5. I put the poppy seed mixture in a bowl, beat the eggs with 1 tbsp. Sugar and 1 pinch of salt until fluffy, stirred it under the poppy seed and poured it evenly over the quince. Finally, the rest of the crumbly dough to sprinkles and spread over it and now off in the preheated oven. After 30-35 minutes the cake was ready!
  6. Then I let it cool in the oven.
  7. Maybe the cake can still be dusted with powdered sugar and served with whipped cream.

tip

Instead of quince you can also use apples, apricots or peaches, then the previous steaming of the fruit can be omitted.
