With us there are fresh shelled asparagus to buy in the fields. It is of course suitable for soups.
I prepare a delicious asparagus salad with ham and egg, which has become our favorite asparagus recipe and goes fast.
Of course you can also take "normal" asparagus, it just takes longer.
ingredients
- 500 g asparagus (Bruchspargel)
- 2 hard-boiled eggs
- 200 g of ham
- some natural yoghurt or cream
- chives
preparation
- Cook the asparagus, dice the eggs and ham and mix everything together.
- The salad is then only with yoghurt or cream (I think yogurt better, as it tastes a bit sour), season with salt, pepper and chives.
- I do not save on the chives in this case, somehow makes a great taste.
We eat salad for asparagus time about 2 times a week in the evening, is of course also very good for carbohydrate-free evening meal.
