Asparagus salad with ham and egg

With us there are fresh shelled asparagus to buy in the fields. It is of course suitable for soups.

I prepare a delicious asparagus salad with ham and egg, which has become our favorite asparagus recipe and goes fast.

Of course you can also take "normal" asparagus, it just takes longer.

ingredients

  • 500 g asparagus (Bruchspargel)
  • 2 hard-boiled eggs
  • 200 g of ham
  • some natural yoghurt or cream
  • chives

preparation

  1. Cook the asparagus, dice the eggs and ham and mix everything together.
  2. The salad is then only with yoghurt or cream (I think yogurt better, as it tastes a bit sour), season with salt, pepper and chives.
  3. I do not save on the chives in this case, somehow makes a great taste.

We eat salad for asparagus time about 2 times a week in the evening, is of course also very good for carbohydrate-free evening meal.
