Boiled potatoes with quark and matjes

Boiled Potatoes with Quark and Matjes - Ingredients for 3-4 people:

about 750 g - 1 kg of potatoes
about 500 g quark or curd cheese
1 onion (medium size)
about half a glass of milk (50-75 ml)
1 egg yolk
1 bunch of fresh chives
2 strong knees (or 3 small ones)
linseed oil
pepper
salt
1-2 pkg. Matjes

Preparation:
- Chop onions into fine pieces (not too small).
- Garlic cloves NOT by the press, but finely chop finely by hand.
- Chop the chives in about half a centimeter long pieces (but you do not need to take a yardstick, you can also estimate that)
- Separate egg yolk from the yolk (I do not have to explain how, right?)


Put the quark in a porcelain bowl, add the milk carefully (sip by squeeze) and stir until creamy, but keep it so that the quark retains its "shape" and does not collapse. (That means, depending on the quark, there may be something left over from the milk.)

Now you pick up the finely chopped onions, then the Knofi, followed by the chives. Slightly more than a pinch of salt, about a teaspoon of pepper just added and stir well.

Now you stir the egg yolk, nice and even. Finally, a dash of linseed oil, just not too much, because then the color of the whole somehow "funny" looks like, since the quark has already received a yummy color through the yolk.


Now off with the part in the fridge. It is enough if you make the quark early, or after breakfast and serve in the evening or the next day at noon.

Please keep in mind that the cottage cheese does not last long because of the "raw egg yolk" (in the fridge for about 2-3 days). I bring in the yolk, because the whole thing has a special touch. It tastes, viiiiiiel much more intense than egg yolk.

potatoes:
Wash the potatoes well, best with the "green sponge" (because there are people who eat the pelle with, since supposedly most of the vitamins are under the potato peel.) But NOT anymore, has been refuted :-p)


Then, put in a saucepan, fill up with water only until the potatoes are "just so" covered. Add 2-3 teaspoons of caraway and a tsp of salt.

Cooking time depending on size, but generally about 20 minutes.

Serve:

Stir again the quark well, garnish a little with fresh parsley and put it on the table with it. The Matjes, if allowed to drain from the pack guuuut beforehand, preferably in a coarse sieve, and put this little nice shape on a plate.

Boiled potatoes please also in a porcelain bowl, because it looks stupid when you put the pot on the table.

The guests should peel their potatoes themselves, which makes the food even more delicious, because everything takes soooo long.

But if you spoil the guests individually, and the plates garnish with the food, it is advisable that you do not clap too much on them "rather smaller portions. As a result, potatoes, cottage cheese and, if you like, Matjes should all be placed side by side on the plate. DO NOT clap the quark on the potatoes or fish.

Not a small tip: If possible, you should not go to the cinema or theater the next day, nor to work, this could possibly cause trouble, or you do not like your colleagues (danger of a good KnofiFahne :))
