Chia seeds: egg substitute and healthy

Chia seeds bind a lot of liquid, they can be used as an egg substitute to bind and they are full of nutrients, ideal for a cereal breakfast.

Chia seeds come from the plant Salvia hispanica, a sage species. The plant is native to Mexico and Guatemala. Chia is said to do a lot of good. Among the Mayans, the famous news runners ate the seeds in a kind of cereal in the morning and were so persistent afterwards that they could walk all day. No wonder the name "Chia" in the Mayan language means "power".

A great feature of these tiny seeds, which are full of vitamins, is their property that they bind a lot of fluid.


If you stir in two teaspoons of chia in buttermilk, with a tablespoon of raisins and 2 tablespoons of oatmeal and let stand for 10 minutes, then you have a sort of satisfying savory pudding. A good healthy breakfast, you are well fed by noon and not at 11 o'clock after a croissant.

In addition, chia is swollen in water, as a binder and egg substitute. I showed it to be a teaspooned in water and allowed to swell, it is as glibberig as gelatin pudding. This small amount, binds without egg, 350 g hamburger for meatballs.
